Fajitas Are The Best Mid-Week Meal For When You Can't Arsed To Cook

Fajitas are a beautifully simple dish that never gets boring with how adaptable they are. They're just meat, bread and seasoning. If you don't have/want to buy all the spices - you can just buy a fajita seasoning packet to achieve a similar result, but you'll find my spice mix linked in the recipe. For a lower calorie higher protein alternative to this dish just drop the Torillas and divide the portions into 2, not 4. I usually like to cook these at the beginning of the week and leave them in the fridge for lunch.



1 Red Onion, Sliced.

1 Green Pepper

1 Yellow Pepper

350g Chicken Breast

2 Large Garlic Cloves

1/2 Tbsp Tomato Puree

Fajita Season Mix

4 Tortilla Wraps



1) Preheat a pan or wok to high heat, we will be cooking very quickly.

2) Slice your onion & peppers to roughly the same size roughly 1cm thick. Mince all your garlic cloves as fine as you can get them. Slice your chicken to the same thickness as the rest of your veg, this will allow it to all cook quickly.

3) Season your chicken with the spices and add 1/2 a tbsp of oil to get the spices to stick.

4) Place your chicken in the pan and sear for 5 minutes making sure to allow it to gain some colour.

5) Add your onions and cook for another 3 minutes, then add your peppers, cook for 2 more, then add your garlic and cook for another minute.

6) Add your tomato puree and a splash of water to make a thick sauce to bind it all together and cook for 60 seconds.

7) Warp your wraps under the grill or in the microwave to soften them (this will make them easier to wrap).

8) Portion the filling out evenly between 4 wraps.
